There are two windowing mode in Ubuntu Touch: Windowed mode with apps displayed in windows floating on the screen, like a desktop and staged mode all apps fullscreen, like a phone. And there is a switch at the notification area near the clock to change between the two modes. When you work with, say, Libreoffice on the windowed mode, and you suddenly switch to staged mode either by disconnecting from the display or by manually changing the switch , the LibreOffice window becomes fullscreen and adapts to the phone screen, which is of course not a pleasant experience, but in principle you can still work with it.
Same happens with all other programs, phone-optimized or desktop optimized, or adaptive apps.
Ok, applications are resized to the full phone screen when disconnecting the monitor, so you can still be working with them assuming we can call it working if an application has not been designed to be touch friendly and for small screens. So basically what you can do with Ubuntu is to mirror the phone screen to a bigger monitor but being able to adapt what you see to the bigger resolution and have a windowed desktop and being able to use a keyboard and a mouse. But then the phone loses its function, I guess, you can use only one device, while with Continuum again, just to know the differences between both convergence aproaches you can keep using the phone like if not connected to any monitor.
